All the hot weather we’ve been experiencing lately may have put us out of the mood for baking, but are we ever really out of the mood for dessert? I think not! So for this week’s recipe, in addition to being one of the best things I have ever eaten – surprise! The only “cooking” required is a minute and a half melting chocolate chips in the microwave!
Actually, this one checks off two of the three boxes on my list of “perfect” things to look for in a recipe. 1) It requires only four ingredients, all of which are readily available and basically non-perishable – so you can keep everything to make it on hand for “emergencies.” 2) It’s such a breeze to put together that I once made enough to serve 200 people at a pig pickin’ in just a couple of hours!
In fact, the only thing keeping this recipe from perfection is that the ingredients – three (8 ounce) packages of cream cheese, one can of sweetened condensed milk, a cup and a half of chocolate chips, and two Oreo Chocolate Pie Crusts – are not cheap. However, it does make two pies, and I guarantee you that when you make this you will get raves.
Preparation is simplicity itself, and with a few tips, you can make them perfect every time. First, when it says “softened” cream cheese, it means exactly that. If you try to rush it and whip the cream cheese into the other ingredients while it’s cold from the refrigerator, you’ll find yourself with white lumps marring both the look and the creamy, smooth texture of your perfect pie. Don’t melt it, but do bring it to room temperature. I like to take it out of the refrigerator the night before and then when I’m ready to put it together, it’s just right!
Next, when you melt the chocolate chips, add one tablespoon of a good grade of vegetable oil before putting in the microwave, and only heat them 30 seconds at a time, stirring between. It will feel silly the first time, because they will seem still to be hard as rocks, but trust me – they will look unchanged even after they’ve begun to melt, and if you overheat them, they will burn.
And actually, that’s about it! Just beat together the softened cream cheese, sweetened condensed milk, and melted chocolate chips with your mixer, pour the mixture equally in the two pie crusts, and pop them into the refrigerator for at least four hours. (I prefer overnight.)
This is guaranteed to make you a hero at any gathering from the fanciest soiree to the simplest family meal. And it’s great with a cup of coffee.
Know what else it’s great for? Everything! This is one of those rare dishes that is perfect for anything from pot lucks to posh soirees. From shindigs to showers. From… well, this is beginning to sound a bit strained, but trust me; you’d have to try really hard to find any situation for which this would not be perfect. Just adjust your serving dish from a paper plate to Grandma’s antique china and you can serve slices of the very same pie for both. It’s that versatile.
And I like it plain, but don’t be afraid to get creative with the garnishes. A bit of whipped cream will look as good as it tastes, with or without a cherry on top. Drizzle on some chocolate or caramel syrup. Sprinkle on your favorite nuts – raw or toasted. And my very favorite is to scatter some fresh raspberries on the plate by each slice. MMmmmmm delicious!
If you want pretty slices, you’ll need to use a very sharp, thin knife and wipe the blade between cuts with a paper towel. And that’s it! So now you’re all ready to impress – well, everyone! – with your culinary skills. As for how incredibly easy these are to make, let’s just keep that our little secret. Enjoy!
Easy-Peasy No-Bake Chocolate Cheesecake Pie
- 3 (8 oz.) blocks cream cheese (softened)
- 1 can sweetened condensed milk
- 1-1/2 cups chocolate chips
- 2 Oreo pie crusts
Melt chocolate chips with 1 Tbsp. oil in microwave for 1-1/2 minutes until melted, stirring every 30 seconds.
Add melted chocolate to softened cream cheese and sweetened condensed milk and beat until well blended.
Pour equally into two Oreo pie crusts and refrigerate until set.
May garnish with chocolate chips, whipped cream, chocolate syrup, and caramel syrup.
